Create a symbolic link to the network drive:
      ln -s /Volumes/<network_drive>/<notes_data_folder> ~/Library/Application\ Support/Lotus Notes Data
Of course, you need to do this before you have a Notes data folder, or move the existing data folder to the network drive before creating the link.

If you use Active Directory or some other kind of directory service, you can also host the user's home folder on the network. And then not only is their Notes data in a single place, so are their browser caches, personal files, etc.

Finally, I suppose you could write some script that copies the Notes data from the network directory when the user logs in to the Mac, and another to copy it back and clean up when they log out. I believe some directory services can do this for you.

Keep in mind that keeping often-used databases (like the NAB, desktop and cache) on the network can significantly affect performance and is not explicitly supported.
